Victorinox filleting knife for fish with a 20-cm blade. A filleting knife with a narrow, flexible blade is best suited for fish, as it allows you to carve the fillet precisely off the bone. The blade is made from the finest stainless special knife steel. The blade is extremely sharp. The Fibrox handle is made from fiber-reinforced nylon that withstands temperatures up to 150 °C. The shape of the handle follows the tried and tested professional design of Victorinox. The matte-surfaced handle provides a good grip even when wet or oily.

In 1884, Karl Elsener opened his knife cutler’s workshop in Ibach-Schwyz. At the time, Switzerland was one of the poorest countries in Europe. In the early years, Karl Elsener fought against poverty in the region by creating jobs and urging people to stay in the country. Victorinox knives have always been and will always be manufactured in Switzerland.
Victorinox is still a family-owned company, even though it is the largest manufacturer of knives in Europe. The majority of the company’s stock is owned by the Elsener family, and the remaining shares are held by a non-profit foundation of Victorinox that distributes the profit to charitable causes.
In accordance with the environmental values of Victorinox, warranty-related matters are primarily handled by repairs and maintenance instead of replacing the affected product with a new one. Victorinox offers a lifetime warranty against defects in materials and manufacturing for its products. Tools worn down in use can be maintained at the cost of spare parts by the importer in Finland or, where necessary, at the Victorinox factory in Switzerland.
